PENGARUH BEBERAPA PERLAKUAN TERHADAP PENGURANGAN KADAR FORMALIN PADA TAHU YANG DITENTUKAN SECARA SPEKTROFOTOMETRI

Abstract: The  treatments  cases  of  tofu  by  using  hazardous  chemicals  (Formaldehyde)  still  common among  in  the  public,  it  is  necessary  to  tofu  handling  that  is  safe  for  the  public.  It  has  been conducted  research  on  the  effects  of  some  treatments  on  reducing  levels  of  formaldehyde  in  2 types  of  tofu,  that  tofu  I  and  tofu  II,  which  is  determined  by  UV-Vis  spectrophotometry  at  a wavelength  412.78  nm  and    temperature  at  40  °C.  First,  tofu  soaked  in  formaldehyde  solution (300 mg / L) for 24 hours, then washed, soaked and boiled. The filtrate was reacted with Nash reagent. Yellow color formed was measured at λ 412.78 nm. The results showed that there is a decrease  of  content  formaldehyde  in  the  sample  has  18.39%  tofu  I  and  22.63%  for  the  tofu  II after  washed,  25.91%  and  25.51%  after  soaked,  63.21%  and  72.02%  after  boiled.  Furthermore, tofu  of  the  market  that  allegedly  contain  formaldehyde  and  then  washed,  soaked  and  boiled. The results showed that there is a decrease in content formaldehyde in the sample tofu I and II has 38.40% and 29.49% after washed, 52.17% and 53.22% after soaked, 87.32% and 85.42% after boiled.
