PENGARUH PENAMBAHAN EKSTRAK HEKSANA BIJI KEPAYANG (Pangium edule R.) TERHADAP BILANGAN PEROKSIDA MINYAK KELAPA (Cocos nucifera L.) YANG DIOLAH SECARA TRADISIONAL

Abstract: The research on the effect of addition of kepayang seed (Pangium edule R.) hexane extract to the peroxide number of traditionally-processed coconut oil (Cocos nucifera L.) has been completed. The aim of this research is to know the effects concentration of intentionally-added kepayang seed (Pangium edule R.) hexane extract into coconut oil (Cocos nucifera L.) and storage duration to the peroxide number and to discover the secondary metabolits contained in the kepayang seed (Pangium edule R.) hexane extract. The concentration of kepayang seed (Pangium edule R.) hexane extract added were 0, 75, 150, 225 and 300 ppm and the storage duration were 0, 2, 4, 6 and 8 weeks. While the method used for phytochemical test was color test. The peroxide number determination was conducted using iodometric titration method and the data obtained was subsequently using two-way ANOVA test. The result showed that there were the effects of kepayang seed (Pangium edule R.) hexane extract concentration and storage duration to the peroxide number of coconut oil (Cocos nucifera L.) at the alpha of 0.01 where at the interaction bar the value of Fcalculation (51.76) > F table (2.81). While from the phytochemistry using kepayang seed (Pangium edule R) hexane extract the result were positive, for alkaloid, triterpenoid, saponin and flavanoid. The lowest peroxide number on week 0 with 300 ppm kepayang seeds (Pangium edule R.) extract was 0.0091 mg O2/g, while the highest one was obtained on week 8 with 0 ppm kepayang seed (Pangium edule R.) hexane extract, i.e. 0.0546 ppm mg O2/g. From the result known, the peroxide number obtained had not exceeded the quality standard established by SNI for coconut oil (Cocos nucifera L.) yet, i.e. 5 mg O2/g.
