EKSTRAKSI DAN UJI ANTIOKSIDAN SENYAWA ANTOSIANIN DARI DAUN MIANA (Coleus scutellarioides L (Benth).) SERTA APLIKASI PADA MINUMAN
Abstract: Anthocyanins have
been extracted from Miana leaves (Coleus scutellarioides L (Benth) by using
methanol that was acidified with HCl (pH 1) and citric acid (pH 1.79) with
total content equal to 820.894 mg / L and 923.181 mg / L . Anthocyanin extract
was identified by UV-Vis spectroscopy in λmax range 250-700 nm, and possibility
of a compound of anthocyanin extract was pelargonidin 3-rutinosida (HCl +
methanol extract) which absorbs in λmax range 279.96 - 508,25 nm and cyanidins
3- O-glycosides λmax absorb in range 278.00 - 520.50 nm. Anthocyanin was stable
at pH 1-3, in which the pH variation of anthocyanin compounds that used to
change the color and structure of the atmosphere was neutral or alkaline. The
influence of temperature was causing degradation of the anthocyanin compounds.
The highest antioxidant activity in methanol was acidified by HCl extract was
84.64% with IC50 values was 0.02% (w / v).
