KARAKTERISASI VIRGIN COCONUT OIL (VCO) DARI TIGA DAERAH SUMBER KELAPA DENGAN VARIASI WAKTU
Abstract: The highest of
coconut-oil yield from coconut plant which planted in Malalayang ciastal areas
is 21,3% and the lowest yield from Tinoor planting areas is 13,4%. Research
showed that the lower area where the coconuts grow the greater the yield of
coconut-oil produced. Based on water content, FFA and peroxide number of the
three coconut sampling locations, the location curring time the lowest
coconut-oil quality (5-hours curring time has better quality than 10-hours and
15-hours curring time). Water content is 0,115% and 0,2535% for 5-hours and
15-hours curring time, respectively. FFA is 0,0873% and 0,2798% for 5-hours and
15-hours curring time, respectively. F\Peroxide number is 0,7325% and 1,915%
for 5-hours and 15-hours curring respectively.
