PERBEDAAN KONSENTRASI KITOSAN TERHADAP TINGKAT KESUKAAN DAN DAYA SIMPAN TAHU
ABSTRACT: The purpose of this
study is to determine the exact concentration of chitosan on organoleptic
quality and storability know. The research was done experimentally by using
Completely Randomized Design (CRD) non factorial consisting of 4 treatments and
4 replications. The treatment in this peneletin is: K0 = Without the addition
of chitosan concentration (0%), K1 = Addition of 1% chitosan concentration of
stock solution, K2 = Addition of 2% chitosan concentration of stock solution
and K3 = Addition of 3% chitosan concentration of stock solution. The data
obtained were statistically analyzed using analysis of variance (ANOVA),
followed by Duncan's test New Multiple Range Test (DNMRT) at the level of 5%.
The best treatment at the intensive search was out with the addition of 2%
chitosan concentration with pH, total bacteria, protein content and assessment
requirements organeleptik accordance with SNI 01-3142-1998 and can extend the
shelf life .
