ABSTRACT: Tomatoes are kept
cool will changes that reduce the quality as heavy shrinkage, discoloration and
texture changes. Packaging modifications are expected to control the quality
changes. This study aimed to determine changes in the physical quality of
tomato fruits during cold storage, and to know the effect of using of HDPE
plastic, wrap plastic (HDPE), and newsprint in tomatoes during cold storage.
The changes in tomatoes during cold storage are the occurrence of heavy
shrinkage, changes into a darker red color, and texture increasingly softened.
Modifications packaging during cold storage helps maintain some physical
quality parameters of tomatoes
